We are looking for an ambitious and skilled sous chef for our kitchen in Folkets Madhus - a place where food craftsmanship and the surprising experience are at the centre. Under the roof of Folkets Madhus, we host private events and parties; we have our food shop, Butcheria, which combines a butcher shop and an eatery with a focus on gastronomic common sense and care; we also have our own butchers who make and develop charcuterie according to old traditions and forgotten crafts. The butchers supply both Folkets Madhus and restaurants and hotels in Copenhagen; and finally, we supply organic lunches to nurseries and kindergartens in the City of Copenhagen.
As sous chef, you will be a key figure in our kitchen and will be responsible for both preparing and organising large parties and developing the food profile in Butcheria. You will be an important sparring partner for our head chef and part of a dedicated team working with quality ingredients, traditional butchery skills and food experiences you want to talk about.
Your tasks will include:
- Planning and managing kitchen activities for large events and parties
- Execution and development of the food profile in Butcheria
- Ensuring high quality and common sense in every dish
- Close collaboration with our butcher on cuts, charcuterie and raw material processing
- Coordination of the prep kitchen in Butcheria
