About the role
As Evening Floor Manager / Sommelier, you guide the guest experience on the restaurant floor and curate a wine program that reflects Sanders’ identity—polished yet low-key. You’ll coordinate service between kitchen and floor, oversee private dining and events, and lead with presence, knowledge, and calm.
Responsibilities
- Floor & Guest Experience – Lead evening service, ensure smooth FOH/BOH coordination, engage guests with genuine, attentive hospitality.
- Wine & Beverage – Curate and maintain a distinctive wine list; create seasonal pairings; nurture supplier relationships; champion responsible sourcing; train the team in confident wine service.
- Administration & Coordination – Manage beverage stock and purchasing within budget; maintain accurate lists, pairing menus and cellar routines; communicate clearly with Restaurant Manager, Head Chef and hotel management.
- Team & Development – Mentor, onboard and upskill the team; foster confidence, consistency and an eye for understated excellence.
We expect that you
- Bring solid floor leadership and sommelier expertise (WSET or equivalent is a plus)
- Communicate clearly and build trust—guests, colleagues, and suppliers alike
- Are organised, solutions-oriented and steady in a dynamic service environment
- Care about seasonality, sustainability and thoughtful pairings
- Are fluent in English (Danish is an advantage) and available for evening/weekend shifts
